las nubes is a washed lot from jinotega, nicaragua, selected as a cup of excellence winner, roasted by west berkshire roastery. washed processing strips the cherry cleanly before drying, which tends to keep the cup focused and clean. expect stone fruit alongside black tea character, with a dry, tea-like finish that makes this a lighter, more delicate cup than a typical central american. it suits filter brewing well, where those quieter flavours have room to come through. a pouroever or batch filter at a medium grind will let the tea-like quality shine without muddying the stone fruit.
