kindeng is a coffee from the western highlands of papua new guinea, roasted by caravan at their exmouth market restaurant. papua new guinea's highland coffees typically grow at altitude on small farms, producing beans with a heavier, earthy character. this one lands on the chocolatey end of the spectrum, with milk chocolate softness alongside darker cocoa depth. that combination suits a cafetière or filter brew where a longer contact time can draw out the fuller body, keeping water around 93c to avoid tipping the dark chocolate notes into bitterness. currently sold out, so worth checking back with caravan directly.
