finca la esmeralda is a pacamara varietal grown in marcala, honduras, and roasted by caribe coffee co. roastery. it's processed using the honey method, where some fruit mucilage is left on the bean during drying, which pulls sweetness into the cup. expect jasmine and floral aromatics alongside caramel, brown sugar, honey, and honeycomb in the flavor profile. the natural sweetness from the honey process makes it well suited to filter brewing, a pour over or batch brewer at around 93°c will highlight the florals without muddying the delicate caramel base.
