jairo is a colombian coffee grown in caturra varietal, produced by hey my coffee, roasted by goya, and sold in a 14-capsule format. caturra is a natural mutation of bourbon, commonly grown at high altitudes across colombia, and tends to produce a cup with bright acidity and clean structure. beyond the varietal and origin, the roaster has not provided processing method or specific tasting notes, so the best approach is to pull it as an espresso through a compatible capsule machine and judge the cup on its own terms.
