your best bet for understanding indonesian coffee isn't some imported interpretation. kopi oey gets their hands dirty with wet-hulled sumatran mandheling that tastes like dark chocolate mixed with tobacco leaves. the gayo beans carry that earthy funk only proper wet-hulling produces. when they roast java beans, the warehouse fills with smoke that smells like burnt sugar and wet soil. this isn't clean, bright coffee. it's muddy and complex, the way indonesian coffee should be.
