this is a washed ethiopian coffee from the sidamo region, roasted by welwyn coffee lab. sidamo is one of ethiopia's established coffee-growing areas, and the washed process, where the fruit is removed before drying, tends to produce cleaner, brighter cups. here it delivers jasmine and broader floral character alongside milk chocolate and dark chocolate. that combination of delicate florals and chocolate depth makes it well suited to filter brewing, where clarity and sweetness can come through, though it will also work as a slower espresso pull for those who prefer a more nuanced shot.
