Ethiopia Sidamo

this is a washed ethiopian coffee from the sidamo region, roasted by bristol coffee company ltd. the washed process strips the cherry before drying, which tends to produce clean, bright cups, and that shows here: expect lemon, grapefruit, and citrus zest up front, with stone fruit adding a little body and a dry, black tea finish that lingers. it suits filter brewing well, where the lighter body and floral-citrus character can open up properly. grind medium-fine for pour-over or aeropress, keep water around 93c, and avoid over-extraction, which would push the citrus into bitterness.
