this is a colombian coffee roasted by dnisi, brought in as a guest offering. it leads with bright citrus, lemon and grapefruit up front, with a dry zesty finish from the citrus peel. underneath that acidity sits a softer chocolate layer, moving from milk to dark chocolate as the cup cools. the contrast between the sharp citrus top notes and the rounded chocolate base makes it versatile. it suits filter brewing where the brighter fruit notes can open up cleanly, though it will also hold its own as an espresso if you prefer a citrus-forward shot with a cocoa finish.
