Guest Coffee - Costa Rica

this is a guest coffee from costa rica, roasted by dnisi. it sits on the brighter, livelier end of the spectrum, with lemon and grapefruit up front and a dry citrus zest finish that keeps things clean and sharp. milk chocolate and dark chocolate round out the cup, adding enough body and sweetness to balance the acidity. it works well as a filter, where the citrus clarity can shine without being muddied. if you prefer something less sharp, a lower brew temperature around 90c will soften the brighter edges and let the chocolate come forward.
