you can smell the wet-hulled gayo beans from the street before you even step inside kopi calf signature. the earthy, almost mushroom-like funk hits different when it's done right, and these guys know their indonesian processing inside out. their sumatran mandheling pulls thick as molasses with that signature herbal bite. java beans here taste like dark chocolate mixed with wet soil after rain. this is what indonesian coffee should be, bold, unapologetic, completely unlike anything coming out of central america.
