this is a washed colombian coffee from wilmer galindez, grown in san augustin using the tabi variety. the washed process removes the fruit before drying, which tends to produce a cleaner cup that puts the bean's natural character front and center. expect bright citrus acidity, lemon and grapefruit in the foreground, with citrus zest adding a sharper edge and caramel rounding things out toward the finish. it suits filter brewing, where that clarity and acidity can come through without interference. grind medium, use water around 93 to 96 degrees celsius, and give it a proper bloom to let the citrus notes develop.
