rum shots is a cup of excellence lot from huila, colombia, roasted by 3c roastery. it's built from caturra and bourbon varietals and processed using the washed method, which strips the fruit before fermentation and tends to produce clean, clearly defined cup character. huila is one of colombia's most decorated coffee regions, sitting at high altitude with distinct dry and wet seasons. as a cup of excellence lot, this coffee was scored and selected through a rigorous national competition. brew it with methods that reward clarity, such as pour over or aeropress, to let the clean washed profile and varietal character come through without muddying the cup.
