natural coffees
natural process is the original way of drying coffee: whole cherries laid on raised beds in the sun, fruit and bean drying together. the result is a heavier, jammier, more wine-like cup than washed.
what is natural-process coffee?
natural processing means the coffee cherry is dried whole, with skin and pulp still on the bean, instead of being washed off first. as the fruit ferments around the seed over two to four weeks of drying, sugars and acids migrate inward. the bean comes out tasting of what it dried in.
what does natural-process coffee taste like?
naturals lean fruit-forward: ripe strawberry, blueberry, red wine, sometimes a sweet, almost rum-soaked finish on ethiopians. body is heavier than washed, acidity rounder, sweetness more obvious. a clean natural feels like fruit. a sloppy one tastes like fermented compost.
why does natural-process coffee matter?
natural is the oldest process on earth and the one that gives a single-origin its biggest personality swing. the same farm, the same variety, washed vs natural can taste like two different coffees. for drinkers who find washed coffees a bit thin, naturals are the easier love.
what should you look for in natural-process coffee?
look for raised-bed drying, a producer name on the bag (good naturals are a craft, not a commodity), and ethiopian, brazilian, or panamanian origin to start. ferment-leaning notes (red wine, tropical fruit) signal a deliberate natural; muddy or sour notes signal one that went wrong.
