medium-dark roast sits right where sweetness and depth start trading places. it's the roast level where caramel browning is fully developed but origin character hasn't been smoked out yet, and that balance is harder to hit than most roasters will admit.
what is medium-dark roast coffee?
medium-dark roast coffee is roasted past the point of full caramelization but stopped before the bean's surface oils dominate the cup. the sugars are deeply browned, acidity is low to moderate, and body gets thick. it's not light, it's not a dark roast, it occupies a specific and genuinely useful middle ground.
what does medium-dark roast coffee taste like?
milk chocolate and dark chocolate are the anchors here, with caramel running underneath almost everything. across the 261 coffees in our index, jasmine and floral notes show up more than you'd expect, especially from yirgacheffe and java lots. winey complexity surfaces too, usually from naturals or wet-hulled beans. it's a warmer, rounder experience than light roast.
why does medium-dark roast coffee matter?
medium-dark roast is where a lot of people actually live, and specialty coffee took too long admitting that. it proves origin still talks at higher temperatures if the roaster knows what they're doing. the 114 roasters in our index working this range are doing serious work, not defaulting to dark because it hides flaws.
what should you look for in medium-dark roast coffee?
sumatra wet-hulled lots bring syrupy body and low brightness. cerrado and sul de minas from brazil tend toward chocolate and nut with clean structure. apaneca in el salvador often shows caramel with some fruit underneath. yirgacheffe at medium-dark is a specific pleasure, floral notes holding on longer than logic suggests they should.
