Medium roast coffee is coffee roasted to an internal temperature that caramelizes sugars without pushing into the bitter, smoky territory of a dark roast or leaving the raw, acidic edge of a light. the bean's own character stays intact but gets softened and rounded. it's forgiving to brew and consistent across brew methods.
what does medium roast coffee taste like?

what should you look for in medium roast coffee?
Start with huila or huehuetenango for that chocolate-and-citrus combination, or yirgacheffe and sidamo if you want the fruit notes to lead. sumatra brings earthiness that reads differently in the medium range. kona shows up here too if you want something unusual. washed and natural processes both work well and pull the flavor profile in noticeably different directions.
