what does dark roast coffee taste like?

dark roast coffee tastes primarily of dark chocolate, milk chocolate, and caramel, the tasting notes our roasters flag most often. underneath those, you'll find cocoa, earthy tones, and almond showing up regularly. the cup is usually full-bodied, low in brightness, and has a kind of settled, rounded finish that lighter roasts don't give you.

why does dark roast coffee matter?

dark roast still matters in specialty coffee because not every great coffee expresses itself best at light or medium temperatures. some origins and some drinkers genuinely suit this roast level. dismissing it entirely means ignoring a real part of how people connect with coffee, and that's just bad coffee culture.

what should you look for in dark roast coffee?

look at sumatra and java for earthy, low-acid bases that take dark roasting well. rwenzori and huila bring enough underlying structure to survive the heat without turning flat. cerrado is worth watching for caramel-forward cups. kona at dark roast is rarer but exists. process matters less here than choosing roasters who treat dark as intentional, not corrective.
