what is mexico coffee?

mexico coffee is arabica grown across the southern highlands, chiapas first and then veracruz, oaxaca, puebla and guerrero, almost all of it from smallholders farming a hectare or two. typica and bourbon still fill the old plantings, with newer rust-resistant varieties coming in after the leaf rust years. most of it is washed, which is where that clean, predictable character comes from.

what does mexico coffee taste like?

milk chocolate and brown sugar are the backbone, with a soft acidity that keeps things gentle rather than sharp. expect almond, a light citrus lift, and sometimes a hint of stone fruit on the higher-grown chiapas lots. it is an easy cup to like, which is exactly why it anchors so many house blends and milk drinks.

why does mexico coffee matter?

mexico sits right next to guatemala and shares much of the same volcanic geography, but it has spent years in its neighbours' shadow despite cupping just as well. it is also one of the largest sources of certified organic coffee on earth, so a lot of what reaches roasters carries real traceability and a fairer price back to the farm. it earns a place well beyond the blend.

chiapas is the region to prioritise on a label, with the highland lots near the guatemalan border showing the most clarity. veracruz and oaxaca are worth a look for something a little different. check for washed process and a named producer or cooperative, and if you want value, mexican organic single origins are some of the most honest coffee for the money.
